Ten little toes
That are already kicking the heck out of me. If she doesn't play soccer, I will be surprised. I can't completely remember what Caroline was like in utero, but man, Alayna is going to town!!

Please note, I was suffering from massive indigestion and heartburn on Christmas Eve that pretty much ruined the night for me. And I never said I'm sorry to my family! According to Laura, I was moping. But I wasn't! It hurt!

Dinner tonight! A recipe...
Balsamic-Glazed Pork Chops
with Arugula-Basil Rice Pilaf
Serves 4
ingredients
3 tablespoons cold unsalted butter
1 6-ounce box rice pilaf mix, such as Near East brand
3 tablespoons extra-virgin olive oil (EVOO)
4 1-inch-thick center-cut pork loin chops
Salt and freshly ground black pepper
1 small onion, chopped
1 tablespoon fresh thyme leaves (from a couple of sprigs), chopped
1 sprig of fresh rosemary, chopped
3 garlic cloves, chopped
¼ cup balsamic vinegar (eyeball it)
2 tablespoons honey
1 cup chicken stock or broth
2 cups trimmed and chopped arugula (from 1 bunch)
15 to 20 fresh basil leaves, shredded or torn Arugula
1. In a medium pot over high heat, combine 1 tablespoon of the butter and 1¾ cups water. Cover and bring to a simmer. Add the rice and flavor packet to the water. Stir to combine, reduce the heat, and cook for 18 minutes, covered.
2. While the rice is cooking, heat a large skillet over medium-high heat for the chops. Add 2 tablespoons of the EVOO (twice around the pan). Season the chops with salt and pepper, then add to the hot skillet. Cook the chops for 5 minutes on each side. Transfer the chops to a platter and cover with foil. Return the pan to the heat and add the remaining tablespoon of EVOO and the onions, thyme, rosemary, and garlic, then sauté for 4 to 5 minutes. Add the balsamic vinegar, honey, and chicken stock. Cook until the liquids have reduced by half.
3. While the glaze is reducing, finish the rice pilaf. Add the arugula and basil to the cooked rice, stirring with a fork to fluff the rice and combine the greens at the same time.
4. Once the balsamic glaze has reduced by half, turn off the heat and add the remaining 2 tablespoons of cold butter. Stir and shake the pan until the butter melts. Add the chops to the pan and coat them in the balsamic glaze. Serve the glazed chops alongside the arugula-basil rice pilaf.
I didn't do the rice pilaf with this. I just did regular Minute Rice with half water and half chicken broth(the rest of the can) with some butter.
John walked in from work and took a big ole sniff and said - It smells good in here. YAY! Then, he actually had seconds! I take that as a huge compliment. I always worry when I cook because I've had quite a few "BAD" dinners and John is such a good cook.
This was actually pretty easy to do. I should have probably cooked the glaze a bit longer and reduced it a bit more. It wasn't very glazey. So, when I say easy to do, I mean that anyone could do this recipe!(THAT MEANS YOU LAURA FOLLETT!!)

A quick update with no pics - Sorry!
Well, we are all moved into the new casa. Caroline is loving her pink room and we are loving our fabulous kitchen!
We recently celebrated the little princess' 3rd birthday. Everyone came over to the house and we had hamburger and hotdogs. Caroline is so loved by everyone and received such wonderful gifts. We got her a swingset, which we tried to keep a secret. Of course, she saw it that morning when we were driving by.
My pregnancy is coming along. Unfortunately, I had some genetic testing done and we found out that I have 2 genetic blood clotting disorders. I am now officially a high risk pregnancy patient. We have to go to the perinatologist every month and get a sonogram. I also have to give myself shots of Lovenox in my stomach every night throughout my pregnancy and 6 weeks afterwards. NOT FUN!!! But, the baby looks great and I am doing pretty good.
We also found out that we are having another little girl!!! Caroline will have a best friend for life. I can only hope that they have a relationship like Laura and I.
Well, that's about it. I hope to actually download the hundreds of pictures on my camera and show off some of them.

Finally!
We are here! We are officially moved in to our new house! Yes, it is an unorganized and undecorated mess, but we are here. It's definitely taking some getting used to and I don't feel 100% comfortable here yet.
The kitchen is fantastically big and beautiful. I was worried about the colors, but I'm not anymore. See...already a mess!
We also have a guest of the not as cute as Mickey variety. We thought we got him the other night, but now we are not so sure. Let's hope he's not in a super hiding place dying. Ew Ew Ew!
In non house related news, I am definitely showing. I had to dig out the maternity jeans and am down to only 2 very stretchy work pants that are comfortable. Last sono at 10 weeks and 6 days showed a very squirmy little one already. I'm curious to see if all this movement lasts.
Caroline will be 3 years old in just 2 short weeks. Time has flown by! She is not quite potty trained yet, but is super smart and will be moving up to junior pre-k at school a week or 2 after her birthday. We are excited for her.

Aack!!! We just want out of here!
We are hoping to close SOMETIME within the next week or two. We'll just have to see!
In other news, baby #2 is growing like a little weed. There is definitely only one in there. Caroline is very excited. When she looks at the sonogram pics, she says it's her baby sister in Mommy's belly.
Caroline is trying out a soccer class tomorrow at school. We are not sure how well she will listen since they usually don't start the kids until they are 3. She's so smart, so we are hoping she enjoys it and follows directions. We just found out she will be moving up to the next room at school sometime after her birthday. Our smart little girl is growing up!

It's raining! Boo!
It rained most of the day today except for a small portion of time this morning. In that time, they put up the garage door and a few bricks. The goal is to be done completely by the 30th. Cross your fingers!

Sorry I've been lax on updating
The house is moving along. They should start the drywall this week. Our brick is in and we had a minor mishap of the wrong stone being delivered. It should be fixed rather quickly. We are so excited. John just met with the cabinet guy and the builder and on one wall of the kitchen will be 12 feet of cabinets!!! It will be a GORGEOUS kitchen!
Caroline loves school. She has so many friends and knows so many words! She's a little chatterbox. She loves to sing and dance and when she is not being 2 and a half, she is pure joy. Here's a picture of Caroline and Grandma P. making a birthday cake. Doesn't she look like she's having a blast?

House Update
Well, most of the plumbing is up. It's amazing how tiny the house looks with no walls. It makes us nervous. We decided to make the kitchen the focal point of the house, so the bedrooms are a little small. That's okay though because we will be using the dining room as a playroom, so bedroom's are just for sleeping.

The backyard - oh the backyard. We are so excited because it is going to be so much bigger than the last house. Lots of room for kiddos and Wyatt to run around in. Speaking of Wyatt, he is having a blast up at John's parent's house. Running around and toughening up (at least we hope).

The house will be these colors. This is the former model home for the builder and we just love it. The only issue is that the last couple shipments of stone haven't been this rust colored. Cross your fingers!

The house!!!
Finally, we are getting started!!! The plumbing is going to be done on Tuesday. I'm so excited, but I have so much to do. We've picked the brick, stone, and wood for the exterior. Now, I just have to pick out the cabinet color, countertops, tile, carpet, and the color of the kitchen.

Happy Fourth of July!
I probably should have posted this yesterday, but I was busy cleaning up throw up. Yes, I had a joyous Fourth being thrown up on all evening. Didn't even get to watch fireworks. John was also at work chasing grass fires all evening. But today, Caroline is fine and we just got back from Laura's!

The terrible two and a halfs...
I've heard of the terrible 2s. 2 and a half seems worse. My friends tell me that 3 and 4 are just as bad. For your viewing pleasure, the newest video over to the right, one of the daily tantrums that occurs around here. They happen at the drop of a hat lately. I've decided to catch a couple for posterity to play at her wedding one day. My favorite part is when she puts her cup down for the grand finale.

The Kiddos
This is officially my favorite picture of Austin and Caroline. She looks so proud that she is holding him.
I cannot wait until he is older and they can interact more. She's so sweet with him. They were at the apartment the other day and she was teaching him how to do a puzzle. Whenever she sees Laura, she doesn't even say Hi. She says, "Where's Austin?"

Apartment Life
Apartment life isn't so bad. We've lived here for almost a month now. We are pretty lucky. It's in the quiet part of the complex. I kind of feel sorry for our neighbors because Caroline is having a hard time adjusting and cries a lot at night.
My only issue is parking. I can't seem to manage to get the boat (the Yukon) under the awning perfectly. And I've hit the metal post once or twice already.
Other than that, we just try to see the bigger picture and think about the fact that we sold our house, got out of that neighborhood, and are building our perfect house!
